Sensory notes: It is a versatile and elegant oil that, in its complexity, presents a fruity intensity that is almost light, dominated by notes of green herbs along with a scent of almond and artichoke. The varieties that compose it have been processed to achieve a particularly harmonious and balanced taste, where bitterness and spiciness coexist delicately, allowing all the positive attributes to be perceived. It has a yellow-green color, bright and clear.
Cultivar: Blend of Grignano, Leccino, Frantoio, Pendolino, and other cultivars.
Oliveto: Located in Valpantena, on the eastern side of the valley, divided into various plots, at an altitude of 300 m.
Period: Harvested in the early maturation phase, within October.
Harvest: Hand-picked with the help of harvesting machines.
